Hyderabad : On 29th and 30th May, Raen- The Chef’s Studio at The Leela Hyderabad will transform into an intimate stage for one of India’s most exciting culinary voices. Chef Triptpal Gandhi, known for his bold reinterpretation of regional Indian flavours through modern technique, takes over for an exclusive two-night pop-up from 7:00 PM onwards.
Known for his deeply thoughtful and progressive approach to Indian cuisine, Chef Triptpal Gandhi brings with him a globally honed perspective that reimagines regional Indian flavours through modern techniques. His culinary philosophy blends heritage with innovation, drawing on elements such as fermentation, molecular gastronomy, and sustainable, low-waste cooking to create dishes that are both rooted and revolutionary.
With an illustrious career spanning India, the Middle East, Europe, and the United States, Chef Triptpal has worked alongside acclaimed culinary names including Chef Gaggan Anand and Chef Sujan Sarkar, and honed his craft at globally renowned establishments such as TIYA (San Francisco), Baar Baar (New York), Indienne (Chicago), and Rooh (New Delhi). His experience also includes time at Michelin-starred kitchens such as Gaggan in Bangkok and The Ledbury in London, shaping his distinctive and detail-driven culinary voice.
At Raen, guests can expect a thoughtfully curated tasting experience that transforms familiar Indian flavours into elevated, multi-sensory expressions. The menu draws inspiration from Chef Triptpal’s signature concept of reinterpreting nostalgic dishes with refined techniques and contemporary presentation. Highlights include inventive creations such as Kulia Chaat with fermented elements and layered reductions, Fermented Khaman Bread with a sourdough-like complexity, and a modern take on Galawat kebabs using edamame and avocado.
Each dish reflects his signature style, one that balances bold flavours, intricate textures, and striking visual composition, designed to engage all senses while staying true to the essence of Indian cuisine.
