For ten evenings this August, JW Kitchen at JW Marriott Hotel Bengaluru hosts a rare culinary residency with JW Marriott Khao Lak Resort & Spa, bringing the cuisine of Thailand’s Andaman coast to Bengaluru. Helmed by Chef Worapong Wongvaiyuth (Chef Eak) and Chef Sawangjit Kongchana (Chef Lookked), the menu moves beyond familiar Thai staples to spotlight recipes that are deeply rooted in Southern Thailand’s culinary traditions, defined by fragrant herbs, fresh seafood, coconut, citrus and spice.
Expect signatures such as Tom Yum Goong, a shrimp soup built on a creamy, sour-spicy broth, before moving through Southern Thai favourites such as Gaeng Kiew Wan Gai, a green curry tempered with coconut milk and Thai basil, and Phad Kra Pao Gai Sab, minced chicken stir-fried with garlic, chilli and hot basil. The mains celebrate the Andaman coast’s coastal traditions with dishes including Hor Mok Pla, a steamed fish cake laced with sweet basil, and Khao Pad Sapparod, a pineapple fried rice finished with cashew nut, curry powder and shredded pork, each prepared using the same recipes and techniques served at JW Marriott Khao Lak Resort & Spa.
Those with a fondness for Thai desserts will appreciate Khao Niew Mamuang, sweet sticky rice paired with ripe mango and coconut cream, and Kluy Tord, banana fritters served with condensed milk, each offering a fittingly indulgent finish.
