Taking place from 8th to 10th May 2026, this limited-time experience brings together the vibrant flavours of South Indian coastal cuisine, reimagined with a contemporary and refined approach.
Set against the tranquil seaside backdrop, guests can indulge in lunch at Pintail Lounge and dinner at C Salt, each offering a distinct yet equally elegant dining setting. The specially curated menus showcase Chef Harish Rao’s signature style—where traditional flavours meet modern techniques—resulting in dishes that are both comforting and innovative, with a strong focus on seasonal ingredients and regional influences.
The experience unfolds through thoughtfully crafted courses, beginning with dishes like the Coconut Milk Rasam with coconut panna cotta and charred cherry tomato, and the Shimeji Mushroom Varuval layered with green peppercorn and mushroom pâté. Seafood enthusiasts can savour the Curry Leaf Pesto Snapper served with a vibrant kokum rassa, while other highlights include the Ice Apple Prawn Curry featuring palm fruit and idiyappam. To complement the meal, guests can enjoy a selection of avant-garde beverages, such as the Gun Fizz Powder featuring gin and passion fruit or the refreshing Kokum Cola house soda. The journey concludes with distinctive desserts like the Muskmelon Ice Cream with watermelon granita and the Chocolate Chilli with warm ganache.
