Fairmont Jaipur, renowned for creating distinctive culinary experiences that celebrate India’s rich regional heritage, is hosting The Himalayan Recipes pop-up at Zoya from 1–4 October 2026. Bringing the distinctive flavours and traditions of mountains to Jaipur, Chef Yojana Khanduri, culinary custodian of Uttarakhand cuisine and founder of The Himalayan Rasoiya will take guests on a journey to discover the culinary character of the region. Rooted in the Himalayan landscape, the experience will showcase time-honoured recipes, indigenous ingredients and the stories that have shaped its food culture across generations.
The Himalayan Recipes offers an intimate introduction to the food traditions shaped by everyday life in the highlands. Curated by Chef Yojana Khanduri, the pop-up brings together earthy flavours, native produce and recipes passed down through generations of home cooking. Each preparation reflects the simplicity and resourcefulness of Himalayan kitchens, where seasonal produce and locally sourced ingredients remain at the heart of the table.
At Fairmont Jaipur, dining is an expression of discovery, bringing together India’s diverse culinary traditions with the elegance and sense of occasion that define the hotel experience. At the heart of this journey, Zoya offers an expansive all-day dining experience, where regional flavours and global influences come together through thoughtfully crafted dishes. The pop-up adds a distinctive Himalayan dimension to the menu, bringing the character of its cuisine to the forefront. Across the four days, guests can savour a specially curated selection of dishes, complemented by two to three specialities featured as part of the evening buffet, offering an inviting introduction to the distinctive flavours and culinary customs of the Himalayas.
Chef Yojana Khanduri mentions, “My connection with food began in my mother and grandmother’s kitchens, where I learnt that every recipe carries a sense of place, season and memory. Bringing these heirloom preparations to Fairmont Jaipur feels especially meaningful, as the hotel has a deep appreciation for heritage, quality, and the stories that give each offering its character. Zoya provides a wonderful setting to share a part of my culinary story with guests. Through this pop-up, I hope to introduce them to the flavours, ingredients and time-honoured cooking practices that have shaped Himalayan kitchens over generations. It is a privilege to present these preparations at Fairmont Jaipur and offer guests something that is rooted in tradition while feeling fresh, thoughtful and memorable.”
Rajat Sethi, Cluster General Manager, Fairmont Jaipur and Raffles Jaipur, said, “At Fairmont Jaipur, we believe that exceptional dining goes beyond what is served on the plate; it is about creating moments of discovery and connection.
