Bengaluru : Ishaara – Food for the Senses, a sensory dining destination celebrated for its immersive experiences and focus on India’s cuisines at Phoenix Mall of Asia, presents The Gourmet Begum, a limited-edition culinary showcase inspired by the refined traditions of Awadhi kitchens. Available until June 30, 2026, the menu revives heirloom recipes and time-honored flavors that once graced the tables of Nawabi households.

Curated by Sunaeyaa Kapur, Founder of Trinayane F&B Redefined, and brought to life by Chef Shahnawaz Qureshi, a member of Lucknow’s renowned Qureshi family, the menu celebrates the richness, nuance and slow-cooked artistry that define authentic Awadhi cuisine.

The experience unfolds through a richly layered selection of vegetarian and non-vegetarian dishes that capture the depth, elegance and slow-cooked character of Awadhi cuisine. Tender kebabs, fragrant spices and delicately balanced marinades come together in appetisers such as Galawat Kebab, Habibiya Chaap, Surkh Gulabi Seekh, Arbi ke Shaami and Chef Qureshi’s Mahi Tikka, where every bite reveals a harmony of smokiness, warmth and subtle sweetness.

The main course celebrates the hallmark richness of Nawabi kitchens, with aromatic gravies, slow-cooked meats and nuanced spice blends that build gently on the palate. Signature preparations such as Murg Baradari, Kofta-e-Gulnar, Matbakh-e-Nihari, Jheenga Dum Nisha, Suleimani Raan and Rumi Biryani showcase layers of flavour developed through time-honoured cooking techniques, while dishes such as Paneer Pardanashi, Begum ki Pasand and Subz Noorani Kofta bring together comforting textures, delicate spices and understated richness.

Freshly baked Sheermal, flaky Warqi Paratha and soft Khamiri Roti complete the meal, offering the perfect accompaniment to the menu’s deeply flavourful preparations. The experience concludes on an indulgent note with Warq-e-Shahi Tukda and the distinctive Lassun ki Kheer, desserts that balance richness, sweetness and lingering complexity in every spoonful.
