Bengaluru : Ishaara – Food for the Senses, the sensory dining destination celebrated for its immersive experiences and focus on India’s diverse regional cuisines, presents House of Kolhapur, a limited-edition culinary showcase inspired by one of Maharashtra’s most celebrated food traditions. Running from July 1 to July 31, 2026, the festival, curated by Chef Ganesh, pays tribute to Kolhapur’s rich culinary heritage through robust spice blends, traditional recipes and time-honoured cooking techniques that have shaped the region’s distinctive gastronomic identity.
Drawing inspiration from age-old family recipes, bustling local kitchens and the culinary legacy of the Maratha region, Chef Ganesh, known for his expertise in regional Indian cuisine and his passion for preserving traditional culinary heritage, brings together an authentic collection of dishes that capture the unmistakable character of Kolhapuri cuisine. At the heart of the menu lies the legendary Kolhapuri masala, a carefully crafted blend of roasted spices that has defined the region’s cuisine for generations. From fiery curries and robust dry preparations to rustic bhakaris and comforting regional desserts, House of Kolhapur offers diners an authentic taste of Western Maharashtra’s rich culinary heritage.
The experience begins with a vibrant selection of vegetarian and non-vegetarian appetisers that awaken the palate with Kolhapur’s signature spice profile. Regional favourites including Kothimbir Wadi, Kharda Mataki Fry, Khardi Bhajji and Kharda Chicken deliver crisp textures, earthy flavours and the unmistakable kick of Kolhapuri spices. The journey continues with vegetarian classics such as Veg Maratha, Methi Zunka and Akkha Masoor, where wholesome vegetables and earthy lentils are elevated by aromatic Kolhapuri spice blends that have been cherished across generations.
The main course celebrates the depth and richness of Kolhapuri cuisine through robust gravies, roasted spice blends and traditional preparations. Signature dishes including Chicken Kolhapuri Sukka, Mutton Kolhapuri Sukka, Kolhapuri Chicken Curry and Kolhapuri Mutton Curry unfold in layers of bold, deeply satisfying flavours. The fiery Tambda Rassa, known for its bold chilli heat, is beautifully balanced by the velvety, coconut-based Pandhra Rassa, creating the iconic contrast of flavours that has become synonymous with Kolhapuri cuisine. Hand-patted Jowar Bhakari, hearty Bajra Bhakari, soft Chapati and fragrant Indrayani Steam Rice are perfect for soaking up the rich gravies, while accompaniments such as Kharda, Thecha and the refreshing Solkadhi complete the experience with authentic regional flavours. The meal concludes with comforting desserts including Malida, enriched with jaggery and ghee, and Lapsi, a delicately sweet broken wheat dessert that leaves a warm, nostalgic finish.
