Known for his progressive approach to modern Indian cuisine and fire-led cooking philosophy, Chef Saurabh Udinia brings a bespoke, one-day-only menu crafted exclusively for this showcase. Rooted in traditional cooking techniques, bold flavour systems, and refined execution, the menu unfolds as a layered, sensory experience designed to be savoured with intention. Each dish is conceived as part of a larger narrative, reflecting a balance between instinct, precision, and contemporary interpretation.
