Two of India’s most celebrated chefs have come together for a collaboration that’s all about uncovering India’s lesser-known dessert traditions. Chef Kunal Kapur of Pincode and Chef Vinesh Johny of LICK – Lavonne Ice Cream Kitchen present the latest edition of Sweet Detours, a limited-time collaboration that brings the flavours of Mizoram to Bengaluru.
At the heart of the collaboration is Koat Pitha, a traditional Mizo dessert made with banana and rice flour. Reimagined as a contemporary plated dessert, it features a crisp, churro-inspired Koat Pitha paired with a bespoke artisanal ice cream crafted by LICK using flavours inspired by the dessert itself, including rice, jaggery, toasted rice, and sesame. The combination of warm, crisp textures and cool, creamy ice cream offers a fresh take on a regional classic while staying true to its roots.
The collaboration brings together what both brands do best. While Pincode continues its mission of celebrating India’s regional culinary stories and introducing diners to recipes from across the country, LICK – Lavonne Ice Cream Kitchenbrings its expertise in creating inventive, small-batch artisanal ice creams that elevate familiar flavours in unexpected ways.
