Grand Mercure Bangalore Brings the Stories Behind Anglo-Indian Recipes to the Table with Bridget White-Kumar
Every cuisine tells the story of the people who shaped it, and Anglo-Indian cuisine is no exception. Born at the confluence of British and Indian traditions, it evolved in family homes, railway colonies and cantonments, creating recipes that have stood the test of time while remaining largely undiscovered by newer generations. Coinciding with World Anglo-Indian Day on August 2, Grand Mercure Bangalore brings this rich culinary heritage to the table with The Anglo-Indian Heritage Table, a limited-period festival curated by acclaimed cookbook author and culinary researcher Bridget White-Kumar.
The festival brings together some of the cuisine’s most enduring recipes, from Colonial Mulligatawny Soup and Railway Vegetable Cutlets to Dak Bungalow Chicken Curry, Colonial Railway Mutton Curry, the intriguingly named Bad Word Curry, Bengal Lancer’s Army Camp Temperado Prawns and Anglo-Indian Saffron Coconut Rice paired with Devil Chutney Relish. The experience concludes with comforting classics such as Old-Fashioned Bread Pudding with Ice Cream, Pineapple Embassy Pudding and Classic Caramel Custard.
More than a celebration of recipes, The Anglo-Indian Heritage Table offers diners an opportunity to discover the stories, traditions and cultural influences that continue to define one of India’s most distinctive culinary legacies.
