Mumbai – At Hearth, where fire shapes flavour and every dish carries the imprint of the flame, a new chapter unfolds. Introducing The Tincture Room – Hearth’s all-new cocktail menu, launched on 1st April – a six-cocktail menu designed not merely to accompany the cuisine, but to heighten, enhance, and redefine the overall dining experience.
This new menu conceptualised by Chef Sabby, who heads the kitchen at Hearth alongside Chef Dhriti, is a natural extension of his culinary philosophy. Drawing from his experience behind the kitchen, and seamlessly bringing in his background in bartending to shape a cohesive, flavour-forward cocktail experience at The Tincture Room.
Talking about the reason behind this new cocktail menu Chef Sabby, Co-Founder and Culinary Director of Hearth said, “The idea was to pull the kitchen into the bar and bring that same energy into how we approach cocktails. We wanted to move away from the rigidity of ‘food belongs in the kitchen and drinks belong at the bar’ and instead blur that line completely. ‘Liquid food’ became our way of expressing that, taking flavours, techniques, and nostalgia from the kitchen and pouring it into a glass. It’s unexpected, a little messy, but that’s the fun of it. You’ve seen us play with food, this is us stepping behind the bar and doing the same with cocktails.”
Blurring the Lines Between Plate and Glass
At the heart of this menu lies a deeply evocative idea: cocktails as liquid food. The drinks draw inspiration from familiar, everyday flavours – school gate snacks, fruit vendors, pantry staples, and reinterpret them through a refined, contemporary lens. Each cocktail is built like a dish, layered with intention, memory, and technique, blurring the lines between what belongs on a plate and what belongs in a glass.
Borrowing directly from the kitchen’s fire-led philosophy, the bar employs methods such as smoking, charring, fat-washing, and infusion to build complexity. Ingredients traditionally associated with food – edamame, fennel flowers, thecha oil, bocconcini, and even carrom seed biscuits – find their way into the cocktails.
What truly sets this menu apart is its innovative approach to serving cocktails paired with a thoughtfully curated side. These elements are not mere garnishes but integral components of the experience, designed to be enjoyed together. A sip followed by a bite enhances flavour, texture, and depth, transforming each cocktail into a multi-sensory journey.
The Tincture Room is serving :
The Pizza Slice – A Light and herbaceous cocktail featuring tomato-infused Ginarte with white balsamic and basil, reminiscent of its namesake, paired on the side with bocconcini spheres and dehydrated sungold tomatoes.
School Gate Masala – A floral and spicy cocktail, blending fennel-infused Ginmare with fresh fennel flowers and thecha oil, bringing nostalgic flavours of after-school indulgences.
Sweet Greens – Earthy and refreshing, this cocktail is built with sugar snap pea-infused Absolut Elyx, paired on the side with edamame sprinkled with sea salt.
Well IYKYK – Fruity with a smoky depth, this cocktail combines Amrut Amalgam with pear cordial and grapefruit air, paired with a poached pear finished with a red wine glaze.
The Biscuit Shop – This savoury and bittersweet cocktail features thyme & butter-washed Patrón Silver with Campari and a vermouth blend, paired on the side with a carrom seed & sea salt biscuit, adding texture and depth to every sip.
Passionfruit Fizzle – Fruity, and subtly smoky, this cocktail uses smoked passionfruit-infused Patrón Silver with a hint of chilli tincture, paired with a fruit salad tossed in chilli salt in a passionfruit cup for a playful, tangy finish.
Whether it’s a nod to childhood memories or a clever reinterpretation of a familiar dish, the menu strikes a balance between wit and sentiment. Among the six, The Pizza Slice and The Biscuit Shop come highly recommended by the team, standing out as signature expressions of the menu’s philosophy.
Chef Dhriti, Co-Founder and Culinary Director at Hearth, also completely resonated with the concept. Speaking about the idea, she said, “When Sabby first introduced the concept, it instantly clicked. It felt like a natural extension of everything we believe in at Hearth. I loved how seamlessly it brought the kitchen and bar into the same conversation, and it was something I was excited about from the beginning.”
With this new menu, Hearth pushes the boundaries of what a cocktail can be, elevating it from a standalone drink to a complete, dish-like experience.
