House of Akina Brings the Flavours of Tangra to Mumbai with Chef Bilkis this Durga Puja

Mumbai : From 15th to 21st October, House of Akina collaborates with Chef Bilkis for a special Durga Puja menu that brings the unique flavours of Kolkata’s Tangra to Mumbai. Known for her deep engagement with Bengali cuisine and her work through home kitchen Golpoh Table, Chef Bilkis brings a perspective that looks beyond conventional Bengali food to the many culinary influences that have shaped Kolkata’s food culture.

At the heart of Kolkata’s Chinese food story is Tangra, a neighbourhood where generations of Chinese families made a home and, in doing so, shaped a cuisine of their own. Chinese culinary traditions met the ingredients, flavours and sensibilities of Bengal, giving rise to a distinctly Kolkata style of Chinese cooking that has become synonymous with Tangra.

This collaboration is a natural extension of House of Akina, imagined around Akina who has travelled through Southeast Asia and returned with an appreciation for its flavours, ingredients and food cultures. As her journey continues, Akina now looks closer to home, exploring India’s regional cuisines through her understanding of Asian food, with Chef Bilkis bringing her deep connection to Kolkata’s culinary landscape,  working alongside the kitchen team to bring the flavours of Tangra to Akina’s ever-evolving culinary journey.

The menu begins with a grazing-style spread of Chicken and Mushroom Baos, Egg Foo Young, Youtiao and a selection of comforting soups, before moving into sharing plates such as Vegetable Shumai, Garlic Bok Choy, Crispy Cauliflower, Chicken Fried Wontons, Tangra Special Chilli Chicken, Green Chilli Chicken and Golden Fried Prawns.

The mains bring together a selection of dishes that showcase the depth and variety of Tangra cooking. On the vegetarian side, guests can expect Chilli Mushroom, Chilli Tofu and Vegetable Meifu Rice Noodles, while the non-vegetarian selection includes Zing Zheng Hu, Cantonese Pan-Fried Noodles and Haimei Sauce Chicken. Alongside these, Chef brings in two personal favourites: Braised Lamb in Brown Sauce and Hakka Douchi Salmon, both reflecting her own interpretation of the flavours she has come to know and explore through Kolkata’s Chinese food culture.

The menu is rounded off with classic Tangra-style accompaniments, including Tangra Cabbage Salad and Prawn Tapioca Chips, adding a light, crisp counterpoint to the richer flavours of the meal.

For House of Akina, the collaboration continues its exploration of food stories that carry a strong sense of place. With Chef Bilkis, the restaurant turns its attention to Tangra, bringing a lesser-known chapter of Kolkata’s culinary identity to Mumbai during Pujo.
