The showcase highlights the restaurant’s signature approach to Japanese dining, balancing texture, technique, and flavour through a selection of inventive sushi creations that embody both tradition and innovation.

Leading the line-up is the Ebi Katsu Salmon, a vibrant creation featuring crispy panko prawns, torched salmon tartare, avocado, sesame, and yuzu kosho mayo, delivering layers of richness, freshness, and subtle heat in every bite. For those seeking more robust flavours, the Karamiso Maguro combines spicy tuna, cucumber, shiitake, and takuan with shiso, tobiko, quinoa, sesame, and spicy mayo, resulting in a bold, umami-driven offering.

The vegetarian selections are equally compelling. The Kakiage Tempura brings together crunchy vegetable kakiage, yukari seasoning, mixed sesame, and creamy vegan mayo for a satisfying balance of texture and savoury depth.
